This week, we would have been serving Pineapple and Ham Fried Rice!

This recipe is great if you made too much rice one night and are wondering what to do with the leftovers! Use up whatever vegetables are in your fridge and add them in here too! Pineapple and Ham Fried Rice Recipe

INGREDIENTS

2 tsp oil

½ cup onion , diced

1 tbs garlic, minced

½ cup carrot, diced

½ cup bell pepper, diced

½ cup ham, diced

 

3 eggs, beaten

3 cups brown rice, cooked

2 tablespoons soy sauce

pepper, to taste

1 cup pineapple, diced

INSTRUCTIONS

  1. In a deep pan, heat up oil over high heat and cook onion, garlic, carrots, bell peppers, and ham until onions are translucent and ham is slightly browned. Push all of the cooked ham and vegetables to the side of the pan.
  2. Beat the eggs and pour into the cleared half of the pan. Scramble the eggs and mix with the rest of the vegetables.
  3. Add rice, soy sauce, pepper, and pineapple. Mix well and let the rice cook until slightly crispy.
